Postdoc in 3D food printing

Application of 3D food printing is merging fast in the food sector based on the possibilities that the technology offers to personalise foods and meals and make processed food more natural, healthy and sustainable.  
 
Department of Food Science is offering a postdoc position for a period of 36 months commencing 1st February 2018 or as soon as possible thereafter. We are looking for an excellent candidate to lead the development of the 3D printing research area at University of Copenhagen. The application deadline is 30 December 2017.   
 
This position funded by the Innovation Foundation Denmark is part of large cross-disciplinary project together with the Danish Technological Institute, Arla Foods, DuPont, as well as experts in 3D printing technology at Create it REAL and University of Arhus. The end-user perspective is covered by Aalborg University hospital. 
 
The position at FOOD will focus on developing ingredient and flavour models for 3D printing applications. The multidisciplinary research to be developed will generate knowledge regarding creation of unique dairy based textures, using healthy protein rich dairy ingredients,  that taste delicious, have lower levels of fat or sugar, and high consumer acceptance.  
The position will focus on interdisciplinary research covering the following areas:
  • Rheology and flow dynamics of dairy based formulations during  the 3D process 
  • Tailoring 3D process and formulation  
  • Flavour and functionality design  
  • Sensory evaluation and consumption behavior 
Furthermore, the position may involve some teaching duties at BSc and MSc levels.  
 
The candidate should have a PhD in Food Science and Engineering or Technology or related academic fields with strong qualifications within some of the following areas:  
  • Understanding the effects of processing on dairy products 
  • Practical experience on evaluation of process and product properties 
  • Sensory evaluation and flavour design  
  • Rheology and flow processing  

Furthermore experience within one or more of the following areas will be an advantage: 

  • Experience in industrial collaboration 
  • Project leadership and collaboration skills  
  • Experience with teaching/supervision of MSc or PhD students

The position is covered by the Memorandum on Job Structure for Academic Staff.  
Terms of appointment and payment accord to the agreement between the Ministry of Finance and The Danish Confederation of Professional Associations on Academics in the State.
